This lovely recipe was given to me by my friend Barbara. It is delicious and light with only 4 ingredients. I have made it countless times over the past few months, it is a great easy baking recipe to have.  It is also a relatively low calorie treat as there is no added sugar or fat in the recipe.

Ingredients

1 mug of strong tea

225g self-raising flour

500g mixed dried fruit

1 egg

Method

  1. Make a really strong mug of tea (black without milk), pour over the mixed fruit. Cover the fruit and tea mix and leave to soak for 24 hours or at least overnight.
  2. Preheat your oven to 190 degrees Celsius/ 375 degrees Fahrenheit/  Gas Mark 5. Line a 2lb loaf tin with greaseproof paper or a tin liner.
  3. Uncover the fruit and sift flour into the fruit and add the egg. With a large spoon , stir the mixture until everything is combined. Transfer cake mixture to your tin and bake in the centre of your over for approx 50 minutes. To check if the cake is cooked, insert a skewer into the centre and it should come away clean.
  4. Leave your cake to cool in the tin for 15 minutes before removing from the tin and the baking paper/liner. Let your cake cool fully on a wire rack before slicing. The brack will keep for several days if covered or stored in an airtight container.

Great served in big thick slices with or without butter and a cup of tea.
