This is my kind of winter cooking, the ultimate one pot wonder! Pop this on in the morning and come home on these dark cold January evenings to a delicious winter warmer.  It has everything in it, so no need for any accompaniments. 20160117_200950

Serves 4

1 tablespoon oil

400g diced beef

4 large potatoes, peeled and chopped into small chunks (think half the size of a baby potato)

500ml beef stock

1 x 650ml jar of passata

1 large onion chopped

2 large garlic cloves crushed

1 red pepper and 1 yellow pepper cut into chunks

1 tablespoon of smoked paprika

1 tablespoon of regular paprika

1 teaspoon chilli powder ( i omit this if serving children)

1 teaspoon sugar

1 tablespoon Worcestershire sauce

1 tablespoon tomato puree

  1. heat oil in a large pan and sweat onions for 5-10 minutes until translucent, add the crushed garlic and stir through. Add the beef and brown on all sides.
  2. Set your slowcooker to low and tip the beef mixture into your slowcooker pot and add all the other ingredients. Give everything a good stir, put the lid on and forget about it for 8 – 10 hours. Alternatively, you can set your slowcooker to high and cook for 4 – 5 hours.
  3. Ladle into bowls and serve with dollop of sour cream and a sprinkle of parsley.
