This is my kind of winter cooking, the ultimate one pot wonder! Pop this on in the morning and come home on these dark cold January evenings to a delicious winter warmer. It has everything in it, so no need for any accompaniments.
Serves 4
Ingredients
1 tablespoon oil
400g diced beef
4 large potatoes, peeled and chopped into small chunks (think half the size of a baby potato)
500ml beef stock
1 x 650ml jar of passata
1 large onion chopped
2 large garlic cloves crushed
1 red pepper and 1 yellow pepper cut into chunks
1 tablespoon of smoked paprika
1 tablespoon of regular paprika
1 teaspoon chilli powder ( i omit this if serving children)
1 teaspoon sugar
1 tablespoon Worcestershire sauce
1 tablespoon tomato puree
Method:
- heat oil in a large pan and sweat onions for 5-10 minutes until translucent, add the crushed garlic and stir through. Add the beef and brown on all sides.
- Set your slowcooker to low and tip the beef mixture into your slowcooker pot and add all the other ingredients. Give everything a good stir, put the lid on and forget about it for 8 – 10 hours. Alternatively, you can set your slowcooker to high and cook for 4 – 5 hours.
- Ladle into bowls and serve with dollop of sour cream and a sprinkle of parsley.
