So as you can see, my obsession with my new fave kitchen gadget (the slowcooker) continues. Here is a super tasty, easy curry recipe for all the family.
Serves 4
Ingredients
2 onions roughly chopped
1oz/25g butter
2 tablespoons oil
1/2 jar of Pataks Tikka Masala paste
3 large chicken breasts cut into chunks
1 x 400g can of chopped tomatoes
2 tablespoons tomato puree
2 tablespoons mango chutney
100 ml cream
100 ml natural yogurt
chopped coriander to garnish
Method
- Fry the onions in the oil and butter for 5-10 minutes until soft. Add the curry paste and fry for a further 5 minutes. Add the chicken and fry for a further 2 minutes. Add the tomatoes, puree and a splash of water, stir well and bring it to a simmer.
- Transfer to your slowcooker. Cover and cook on high for 2 hours.
- Stir in the chutney, cream and yogurt. Re-cover and cook for another 15-20 minutes.
Serve with rice and poppadoms, scatter with coriander to serve.
