I really love granola but i tend not to buy it anymore because the shop-bought ones tend to be high in added sugar and are expensive. Whipping up a batch of this wholesome granola takes no time at all and is really tasty.
Ingredients
2 cups oats
3/4 cups chopped almonds
1/2 cup chia seeds
1/2 cup dried cranberries
1/2 cup desicated coconut
1/3 cup honey
1/3 cup coconut oil
1 tablespoon brown sugar
1/2 teaspoon sea salt
1 teaspoon cinnamon
1 teaspoon vanilla extract
Method
Preheat the oven to 180 degrees Celsius or equivalent. Line a large baking tray with baking paper.
Combine all the dry ingredients in a bowl.
Place the coconut oil in a saucepan and heat until it has melted. Add the honey and vanilla and stir through for a few seconds.
Pour the liquid ingredients over the dry ingredients and stir well until everything is combined.
Transfer the granola to the baking tray in a single layer, then cook for 15 – 20 minutes, stirring frequently.
Remove from the oven and cool.
Serve with yogurt or milk. It tastes great with fresh berries too. This granola will keep for 4 weeks in an airtight container in a cool dry place.
