I think i know now where the expression ‘earning brownie points’ comes from. Serve these dark, squidgy squares of chocolatey heaven from Nigella Lawson to friends and family and you will certainly earn plenty.
Ingredients
225g dark chocolate (minimum 70% cocoa solids)
225g butter 2 teaspoons vanilla extract
200g caster sugar 3 large eggs (beaten)
150g ground almonds
100g chopped walnuts ( I don’t believe that a walnut has any place in a brownie so i replace these with a generous handful of chopped up marshmallows).
Method
- Preheat the oven to 170°C. Melt the chocolate and butter gently over a low heat in a heavy-based saucepan.
- Take the pan off the heat, mix in the vanilla and sugar, and let it cool a little.
- Beat the eggs into the pan along with the ground almonds and chopped walnuts. Turn into a 24cm / 9 inch square baking tin or make your life easier ans use a foil one.
- Bake in the oven for 25-30 minutes by which time the top will have set but the mixture will still be gooey. Once cooler, cut carefully, four down, four across, into 8 squares.
These are great if you are having people for dinner, you can make them the day before and store in an airtight container. Warm gently and serve with a dollop of good vanilla ice-cream. Enjoy, Dublin Mummy x
