Simple, delicious – serve with champ and roasted root veg for an all round comfort meal! Great dish for feeding a crowd on St. Patrick’s Day – improves when made in advance and re-heated.
Irish beef cooked in Guinness
Serves 6-8
1kg lean stewing steak – cut into chunks
2 tblsp olive oil
1 large onion sliced
5 tblsp plain flour
2 tblsp tomato puree
2 cloves of garlic -crushed
bunch fresh thyme
3 bay leaves
1 can Guinness
500ml water
2 tblsp Horseradish sauce
garnish – chopped fresh parsley
- preheat oven 150 celsius
- toss the meat in seasoned flour
- heat the oil in a large ovenproof casserole, brown the meat in batches
- remove the meat and set aside. Cook onions until soft and light golden brown
- return the meat to casserole
- add the tomato puree, garlic, seasoning, herbs, Guinness and water – stir well
- bring to the boil
- take it off the heat, stir through horseradish sauce. Cover and cook in the oven for 1hr 30mins until meat is tender
- stir occasionally and add more water if needed
- garnish with parsley
