I am not claiming that this is in anyway an authentic Indian curry but its a healthy, nutritious one that everyone in my house eats.  It’s easy to make and freezes well.

Serves: 2 adults and 2 children

1 tablespoon of oil
3 Chicken Breasts chopped
1 large onion finely chopped
1 red pepper chopped up fairly small
1 tin of chopped tomatoes
1-2 tablespoons of Schwartz medium curry powder
1 tablespoon Mango chutney
1 tablespoon tomato puree
1 small cup of red split lentils
1 small tub of Natural Yogurt

Fry the onion and red pepper in the oil for about 5 minutes until soft
Add curry powder and cook for a further minute
Add chicken and fry for a couple of minutes until all pieces are browned.
Add everything else in now (except yogurt) plus a mug of cold water.
Bring to the boil and then simmer with the lid on a nice low heat for about 30 mins.
Give it stir occasionally and add more water if it needs it.
At the end stir in the natural yogurt and  serve with rice.
